Lenten Season is one of the celebrations of Christians that is since practiced several years ago. This highlighted the Holy Week – the celebration of the Paschal Mystery of Jesus Christ, in other words, it is the celebration of the suffering, death, and resurrection of Christ. This is also the season to pray, penance, sacrifice and conversion of oneself by repenting his/her sins.

Since the Philippines is known to be primarily a Christian country and has a big number of Roman Catholic devotees, Lent and Holy Week are observed in various ways. There are several customs and traditions that are being observed for fasting and spiritual discipline, during this season. One of the notable practices are fasting and abstinence as part of a sacrifice. Most Catholics fast at the beginning of Ash Wednesday, they partake one full meal a day and abstain meat on Fridays.

Filipinos follow the tradition to practice their belief with full respect and sincerity. Thus, those favorite foods that we usually enjoy will be set aside for the unfading faith that the devotees had. Indeed, foods are irresistible which allures us every now and then. The main challenge that was expected here is thinking that when lent season comes, we will choose to eat those leafy vegetables, plain foods and unfortunately, some don’t enjoy it.

But, don’t you know that those simple dishes that we have during Lent and Holy Week can be improved in simple ways? Well, perhaps this list of Filipino foods can help nourish your body, help you reflect during this season.

  1. Ginisang Ampalaya with Egg

The main ingredient is ampalaya (bitter melon/gourd) that was sauteed with onion, garlic, tomatoes and beaten eggs for an additional taste that makes the dish better.

  1. Tortang Talong or Eggplant omelet

The main ingredient is talong (eggplant) which is dip in beaten eggs for seconds and then fry.

The main ingredient is togue (mung bean sprout) that was sauteed with vegetables, shrimps, tofu or other spices that can make it more tastier.

The main ingredients are sardines (any variety) and misua (flour noodles) and can be added with patola for more presentable and tastier look.

This is a simple food that can make everyone drools when heard the term “bulad” (dried fish). It is better when the rice is still warm and the tomato is mixed with vinegar and the plus factor of chili.

The main ingredient is kangkong (water spinach) that was sauteed with onion and garlic and added with oyster sauce (soy sauce will do).

 The ingredients are bulaklak ng kalabasa (squash flowers), small ampalaya (bitter gourds), malunggay (horseradish) or other green leafy vegetables. These vegetables were sauteed and can be added with fried fish for a perfect taste.

The main ingredients are monggo that is mixed with malunggay and added dilis on the top for crunchier and tastier. Some prefer to have more liquid on this dish for satisfaction.

Saute the spices first (onion and garlic) and fry the fish add some soy sauce and vinegar for several minutes, add laurel leaves and seeds and serve. Some prefer with chili for a perfect combination.

  1. Biko and Sikwate

A famous Pinoy kakanin that usually serve during the Black Saturday. It composed of glutinous (sticky) rice with coconut milk and sugar. Best serve with bukayo on the top and sikwate. Sikwate is a chocolate drink came from tablia (cocoa).

A Visayan dessert soup that composed of slices of saba, taro, sweet potato, sago, langka, few rice grains and is mixed with savory ginataan (coconut milk).

These are simple foods that have a twist to enjoy our meal. You can also try experimenting other dishes (intended for Lent) for your consumption. Remember, foods are intake to make our body healthy and to do physical activities, but the most important thing is how we make our spirit healthy by means of living the words of our God not just for this season but all throughout our lives.
